    Concession Line Flow Guide

    Fast Service for Busy Events

    Quick Answer: Managing Concession Lines

Keep concession lines moving by using a single-file queue leading to service points, posting clear signage with menu and prices, and assigning one operator per machine. For events over 100 guests, add a runner for restocking and consider separating order and pickup areas to prevent bottlenecks.

    Layout Options

Choose a layout based on your space and expected volume. Simple setups work for smaller events; split-queue setups handle higher traffic.

Option 1: Single Line β†’ Single Window

Best for: Smaller events (under 50 guests)

[Guest] β†’ [Guest] β†’ [Guest] β†’ [Service Point]
                                        ↓
                                   [Pick Up Here]

Option 2: Single Line β†’ Two Service Points

Best for: Medium events (50–150 guests)

                                  β”Œβ†’ [Popcorn]
      [Guest] β†’ [Guest] β†’ [Guest] ──
                                  β””β†’ [Cotton Candy]

Option 3: Separate Order & Pickup Lines

Best for: Large events (150+ guests)

      ORDER LINE: [Guest] β†’ [Guest] β†’ [Cashier/Menu]
                                             ↓
PICKUP LINE: [Wait Here] ←←← [Service Points]

Separating order and pickup prevents crowding at the service area and speeds up throughput.

    Staffing Ratios

These are practical guidelinesβ€”adjust based on your event flow and menu complexity.

    • β€’1 operator per machine β€” Each concession unit (popcorn, cotton candy, snow cone) should have a dedicated operator.
    • β€’Add 1 runner for high volume β€” When serving 100+ guests, a runner keeps supplies stocked and clears finished items.
    • β€’Add 1 cashier/line manager for big crowds β€” At 150+ guests, having someone manage the queue and handle payments separately reduces wait times.
    • β€’Consider pre-packaging β€” Have an extra person pre-bag popcorn or pre-spin cotton candy during peak times.

    Signage & Barriers

Clear visual cues reduce confusion and keep lines orderly.

    • β€’Menu board placement β€” Position the menu where guests can read it while waiting in line, not just at the counter. This speeds up ordering.
    • β€’Stanchions or tape β€” Use rope stanchions, caution tape, or cones to define line paths. Prevents crowding and "line cutting."
    • β€’"Exact cash / tap only" cues β€” If you're not giving change or only accept certain payments, post this clearly to avoid slowdowns.
    • β€’"Order Here" and "Pick Up Here" signs β€” Essential for split-queue setups. Large, visible lettering prevents wandering.

    Speed Tips by Item

Different concession items have different service speeds. Plan accordingly.

    🍿 Popcorn

Fastest option. Pre-bag during slow periods. Keep bags ready to hand out instantly during rushes.

    🍭 Cotton Candy

Medium speed. Pre-spin cones and bag them. Live spinning is entertaining but slowerβ€”save it for light traffic.

    🍧 Snow Cones

Slowest option. Shaving ice and adding syrup takes time. Pre-shave ice into cups if possible; let guests add their own syrup.

    🌭 Hot Dogs / Nachos

Varies. Keep items pre-cooked and warming. Assembly should be quickβ€”have condiments accessible but controlled.
